Jizake (地酒) literally means local sake.

Niigata: Crisp, dry “tanrei karakuchi” style, born from snowmelt water.• Kyoto (Fushimi): Elegant and smooth, made with soft Fushimizu.
Nada (Hyogo): Bold, dry otoko-zake, powered by mineral-rich Miyamizu.
Akita: Refined, slightly sweet, crafted with the Nanbu Toji tradition.
